I downloaded the demo for both PS3 and 360, and there were noticeable differences. First off, the infamous "invisible players glitch" only happens to me on PS3. I've played maybe 40 games on 360, never had the glitch happen, only played like 6 or 7 on the PS3, and it happens every time. It's quite frustrating. Sometimes calling a timeout then pausing helps, SOMETIMES. Also, the PS3 version seemed to have a great speed setting difference. Very slow was WAY too slow, and fast seemed way too fast (I hate the speed on normal so I have to use slow or very slow).

    Pros:
The engine is definitely cleaned up, runs smoother with nicer animations.
DBs WILL drag their feet to make that sideline interception.
Doin a little dance (just celebrations, but I love it :D)
defensive players play much smarter with the read and react, really can't just put a ball up there and expect to pull it down miraculously.
Upgraded O Line AI. I noticed when playing that the OL would pick up blocks a lot better, even that weren't designated for the play. My guard ran across the pocket to pick up a blitzing OLB.
Linebackers no longer seemingly jump 10 feet into the air for picks.
Dive tackle animations are much improved. Looking at an automatic replay I noticed they attempt to wrap the ankle/leg if they can't wrap the body.
Defense adjusts well to read option. Using man coverage and a QB spy, they used the scrape and dive technique. Worked very well, occasionally worked well on the triple option.
LT doesn't seem overpowered. On 13' my LT got injured and had to plug in a 72 overall mid game. His extremely low pass blocking and footwork didn't seem to be weaker than my starter's. He never gave up a sack.

    Cons:
Truck sticking is overpowered against DBs. I trucked Chancellor with Rogers, plus broke like 7 tackles by trucking with Pitta.
Players kinda jump when being hit occasionally. Had the Packers stopped on 3rd and short, Lacey is being brought down but leapt into the air like he got hit from the side.
Injuries and fatigue. The same issue with the Madden 13' demo is back. Playing on All-Madden half of my starters were taken out after 2 plays.
    Way too many fumbles
Hit sticking is done well, BUT even smaller players with low hit power can use it too well. Corey Graham made a huge hit on Frank Gore on a run (not a pass he just caught, not a blind side hit, head to head open space), among others.
Some of the same stale commentary.
Trying to commit after a questionable play still results in accidental challenge. Pulled LT to commit to a run on 3rd and short, forced me to challenge and lost me my last timeout.

These are just the things I've noticed that happen frequently, there were others I noticed that happened occasionally so I didn't think it was worth noting. Other players may not have had the same issues or luck that I've had.
